Sour sap extracted from a rocky ridge. Fermented from a distance.

This salivating sap is reminiscent of a green apple that has been bruised with a smooth creek-found stone.
Fresh green and electric blue acids – like Gaia herself.

With or without food.

100% Chardonnay. 10.4% Vol.

Whole bunches to a neutral American oak barrel via a basket press. Wild fermented. Left on lees for a couple of months. Bottled straight from barrel.

Small addition of sulphite.

EARTH that from which the vine arises.
