Sour sap extracted from a rocky ridge. Fermented in the hollow of a Eucalyptus tree.
This salivating sap is reminiscent a young apple or zesty lemon that has been bruised with a smooth creek-found stone.
Fresh green and electric blue acids – like Gaia herself.
With or without food.
100% Chardonnay.
Whole bunches to a neutral American oak barrel via a basket press. Wild fermented. Left on lees for a couple of moonths. Bottled straight from barrel.
Small addition of sulphite.
Possibility of finishing malo in bottle?
EARTH that from which the vine arises.
